Blanching an almond (taking the skin off) is that extra step that Barney Butter takes while no other almond butter on the market does. Taking the skin off results in an ultra-smooth, creamy texture. From a health standpoint, taking the skins off eliminates the phytic acid, which can cause “tummy-aches” or difficulty with digestion in some people who are sensitive to phytic acid.
Don't worry - our left-over almond skins are 100% recycled into local livestock feed, a common and healthy replacement for alfalfa!
